Heath is credited for being one of the first people to bring real New York style pizza to Salt Lake valley when he opened DeLoretto's Pizzerias in the mid-1980's.
While the thin crust style pizzas rival those found in New York City, it is the seasonal daily specials that elevate Nuch's cuisine.

Nuch's is a small restaurant with a warm and friendly atmosphere. When Heath was designing the restaurant his goal was to create an environment where people felt that they were guests in his home. You may want to call for reservations, especially in the winter when there are only seven tables available.
Heath Koltenuk, the creative and energetic chef who owns and operates Nuch's, says his goal was to create an atmosphere and culinary experience where his guests could truly enjoy their food.
He does this by offering the freshest and tastiest food possible. Sauces, dressings, soups, ricotta cheese, pastas, and desserts are all prepared in-house. Ingredients are used from a small onsite culinary garden and other local growers whenever possible. Meals are prepared with high quality ingredients and always made to order. Heath boasts that there are no microwaves or freezers used at Nuch's.
